Yesterday I baked a loaf of whole wheat bread in our sun oven. Then I decided to make eggplant sandwiches. I had a fresh farmers market eggplant, which I sliced up and drizzled with fresh garlic, olive oil, salt, and pepper. Then I put the eggplant slices in the sun oven and left them there for about an hour. Halfway through their cooking, I added a bell pepper from our garden to the sun oven, and roasted it along with the eggplant. I assembled the sandwiches with tomatoes (from the farmer
